Intermittent Fasting and Meal Timing: Does When You Eat Matter?
About this Event
Is it possible that when you eat plays just as big a role as what you eat? Join us on Thursday, May 28, 2026, at 12:00 p.m. CT, as Dr. Olivia Altonji guides us through the science during Intermittent Fasting and Meal Timing: Does When You Eat Matter?
This webinar highlights how meal timing can influence overall health and daily well-being. You'll learn what intermittent fasting is, how its main approaches differ, and what research shows about the effects of skipping breakfast or eating later in the evening.
Dr. Altonji will cover how fasting patterns may impact blood sugar, cardiovascular risk factors, and weight management - even when the scale doesn't change. The discussion also explores how eating windows relate to healthy aging and long-term metabolic function.
About Our Guest
Dr. Altonji is a postdoctoral fellow in the UAB Nutrition Obesity Research Center and the Department of Nutrition Sciences. She earned her Ph.D. in Nutrition Science from Auburn University before joining Dr. Courtney Peterson's lab at UAB, where she contributes to clinical trials focused on time-restricted eating, a form of intermittent fasting.
Her work centers on understanding how eating patterns influence blood sugar regulation and the function of adipose tissue, commonly known as body fat. Dr. Altonji brings a research-driven perspective to the study of meal timing and metabolic health, adding insights into how carefully structured eating approaches may support long-term wellness.
